Fruit salsa

I am a huge salsa fan! I make mango avocado salsa frequently because it’s delish. You can find that recipe here.

My second fav: FRUIT SALSA

I use a variety of fruit:

**Red delicious apples-peeled and chopped

**Strawberries – remove stems and chop

**Kiwi fruit – peeled and chopped

**Raspberries chopped

Mix all fruit together and add a couple tablespoons of jam (I used strawberry but really any flavor will do)

To avoid added sugar, I don’t include much else, but you can put in a couple tablespoons of white or brown sugar if you feel it’s necessary.

Add a few squirts of lemon juice and stir.

Serve with cinnamin crackers.

Dark chocolate covered frozen bananas

I found an amazing recipe thanks to The Daniel Plan. It’s the perfect treat-refreshing and sweet. I did modify it a little so my version is below.

CHOCOLATE COVERED FROZEN BANANAS

*1 banana- sliced into chips

*1 cup melted dark chocolate chips

*1/2 cup chopped walnuts

Slice bananas into small circles, dip into melted chocolate, and roll in chopped walnuts. Place on parchment paper on cookie sheet, and place in freezer for at least 1 hour. Enjoy!

Air fryer cauliflower

Holy crap this is delicious. Raw cauliflower is harsh on my stomach, so I am trying to get creative.

I took a head of cauliflower, some olive oil, salt, pepper, ground turmeric, and smoked paprika. Cook at 400 for about 10-12 minutes.

It’s crispy and flavorful!
