Homemade Acai bowls

I have a new favorite breakfast. Acai bowls.

Delish.

You can find packets in your frozen food aisle. If you like a thicker texture, toss it in the blender with some frozen strawberries or ice.

Pour the acai mixture in a bowl. My favorite toppings: banana slices, blueberries, chopped walnuts, and sliced almonds. Sprinkle some shredded coconut and drizzle honey.

I could eat this every day and never get tired of it.

My neighbor told me about their homemade granola and it sounded delicious. Since I eat the same foods over and over again, I thought I would mix it up and give it a try. I have eaten store bought granola, but it usually has unnecessary ingredients and loads of added, fake sugar.

But this recipe…delicious! Add blueberries for that peanut butter and jelly taste!

Tips: Soften the peanut butter in the microwave for a few seconds before mixing. Use real honey, preferably local, for the best health benefits. Use parchment paper to line your cookie sheet for easier clean up. Buy divided containers to easy separate your ingredients until you are ready to eat.  Add chopped nuts, chocolate chips, or dried fruit to mix it up.

 

Peanut Butter Granola

Only 4 ingredients in this simply granola recipe

  • 4-5 cups Old fashioned oats
  • 1 cup peanut butter (slightly softened)
  • 2/3 cup honey
  • 1-2 tsp vanilla extract
  1. Mix together honey, slightly softened peanut butter, and vanilla extract

  2. Mix in 4-5 cups of old fashioned oats

  3. Spread out evenly on cookie sheet

  4. Bake at 275 degrees for 30 – 35 minutes, stir halfway through

  5. Let cool before storing in air tight container

Delicious Summer Protein Smoothie Recipes

I am such a creature of habit. Every morning I have the same protein smoothie – delicious – but getting boring! You can read about my tried and true morning smoothie here.

Time to change things up a bit! I have found some very delicious recipes to share. Frozen fruit works well because it gives the iced texture and it lasts a lot longer than fresh fruit. This allows me to have a larger variety of options. If you are using fresh ingredients, I would suggest adding some ice before blending.

Now that I am pushing 40, I have started using Collagen powder. I add this to my smoothies as well and have found it to blend right in and not alter the taste at all.

Blueberry Cheesecake Protein Smoothie

Either fresh or frozen blueberries and spinach will work! If I use fresh, then I add ice. If I use frozen, then I don't.

  • 1 cup Blueberries
  • 1 cup Spinach
  • 8 oz Almond milk
  • 1 scoop Vanilla protein powder
  • 2 tsp Cheesecake pudding mix
  1. Mix all ingredients, blend, and enjoy!

 

 

Peach Cobbler Protein Smoothie

This takes like Peach Cobbler in a glass! So refreshing and delicious!

  • 1 cup frozen peaches (If using fresh, add ice)
  • 1 scoop Vanilla protein powder
  • 1/2 tsp ground cinnamon
  • 8 oz Almond milk
